This luscious potato soup, flavored with buttermilk and topped with caramelized onions, offers a delicious first course, served with rye bread.

A harvest of new potatoes offers the essential ingredients for this simple soup of potatoes, buttermilk, caramelized shallots and dill. Heat the cold buttermilk simply by pouring it over the steaming hot potatoes. Use a variety of potatoes, such as 'Gold Rush,' 'All Blue' and 'Red La Soda,' and savor the integrity and character of each.

Serve buttermilk potato soup with an open-faced sandwich of rye bread spread with a thin layer of butter, cucumber slices and a drizzling of honey. Michael found the inspiration for this unusual yet delicious combination from a passage in Tolstoy's "Anna Karenina."

RECIPES

BUTTERMILK POTATO SOUP

Makes 4 servings

Ingredients:

  • 2 pounds new potatoes, such as 'Gold Rush,' 'Austrian Crescent,' 'All Blue,' and 'Red La Soda'
  • 1/2 teaspoon coarse salt, plus more to taste
  • 2 tablespoons unsalted butter
  • 6 shallots, thinly sliced
  • 4 cups buttermilk
  • 1 tablespoon fresh dill, coarsely chopped
  • Freshly ground black pepper

Directions:

  1. Place potatoes in a medium saucepan, cover with cold water and add salt. (If you're using more than one variety of potato, use separate saucepans for each variety to accommodate various cooking times.) Bring water to a boil and reduce the heat to a simmer. Cook until the potatoes are fork-tender, about 10 to 20 minutes.
  2. While the potatoes are cooking, heat butter in a medium skillet over medium-high heat and add shallots. Reduce heat to medium, and saut? until golden brown and lightly caramelized, about 12 to 14 minutes.
  3. Drain potatoes and set aside to cool briefly. With a sharp paring knife, remove a small band of peel from the center portion of each potato. Divide cooked potatoes between four soup bowls and pour about 1 cup buttermilk into each bowl. Top with caramelized shallots, season with salt and pepper and garnish with fresh dill. Serve immediately.

OPEN-FACED RYE-BREAD SANDWICH

Makes 4 servings

Ingredients:

  • 4 slices rye bread
  • 1 tablespoon unsalted butter, softened
  • 1/2 English cucumber, thinly sliced on an angle
  • 1 tablespoon honey

Directions:

Divide the butter among 4 slices of bread. Place cucumber slices on each piece of bread and drizzle with honey.

What type of yoga should I try?

There are as many types of yoga as there are colors of yoga mats. Here?s a very basic guide to yoga styles:

  • Hatha ? ?This is an all-levels gentle yoga practice that includes twists, stretching, and strengthening.?
  • ?Vinyasa ? Yoga that is connected to breath (inhale as you go up, exhale as you go down, etc) and has a fluidity between postures. Vinyasa is more cardiovascularly challenging than Hatha.
  • Ashtanga ? ?Similar to Vinyasa, but follows a specific series of postures that are to be completed in a particular order. This is typically a challenging class depending on the studio and teacher.
  • ?Bikram (Hot Yoga) ? ?Named for the yogi who trademarked his personal style, this class moves through 26 postures in a specific sequence and is performed in a room heated to 105? at 40% humidity. If the class style is called ?Hot Yoga,? the teacher probably doesn?t have Bikram?s blessing to teach his trademarked style, but it will be very similar to what is described above.
  • Find Your Yoga Style -?A yoga teacher in North Carolina made a very handy flow chart to help you find the yoga style that is right for you.?

Louisville has a wonderful yoga community eager to bring the practice to everyone regardless of financial status. Louisville Yoga CoOp keeps a calendar of free and donation based yoga around the city. Their?Facebook page is constantly updated with upcoming community classes.

Yoga East on Frankfort Avenue recently converted to a donation based yoga studio. Some of the best and most passionate teachers volunteer there. The studio offers a wide variety of classes for beginners and advanced students.?

Many local studios offer at least one or two donation-based classes as well, check their calendar or follow their facebook pages to stay informed.

3. Have strong organizational skills
4. Must be outgoing and willing to talk to and meet new people. (not repeated on accident)

What is the worst thing about this job?
1You make little to no money the first 3 to 5 years your in this field. If you can survive for 10 years you will be set for life.
2. You have to find new customers all the time. This is the single most difficult part of the job. Most insurance companies will make you write down a list of 100 friends and family members to contact when they first hire you. So 2 weeks latter you have called them all and maybe 3 or 4 felt sorry for you so they bought something. Now what do you do? Start knocking on doors? Grab the Yellow Pages? This part really sucks. After you do this job for 5 to 10 years its much easier because you will have built a reputation and most of your customers will come by word of mouth

3. What is the best thing?
1. Financial Freedom after you pay your dues. If you make it 10 years you will have all the money you need for the rest of your life. There are not many jobs that can give you this kind of freedom
2. Freedom to set your own schedule. You work when you want to work. ( dont kid yourself here) you will work 60 to 80 hours a week when you start out. But if you need to take a day off you just set your schedule up to have the time off.

The insurance business is a great business to be in. It takes a ton of work and patience but its well worth it. You will want to get licensed to sell not only Auto insurance but all of the Property & Casualty lines, Life and Health insurance, and maybe get a securities (series 6 or 7) By having the flexibility to cover all of your clients needs you can make way more money then just collecting 5 or 6% commission on just selling the car insurance. Also the more lines of business you have the more likely your customers wont shop for new coverage every year.

Wall St gains 1 percent on stimulus hopes (Reuters)

NEW YORK (Reuters) ? Stocks rose more than 1 percent on Wednesday, extending the previous day's run on hopes the Federal Reserve would act again to boost the economy after a new batch of mostly soft economic data.

Industrial and materials stocks were the top gainers, with the S&P industrials index (.GSPI) up 1.8 percent and the materials sector (.GSPM) gaining 1.5 percent.

On the Dow, Caterpillar Inc (CAT.N) was up 3.2 percent at $92.64, and Alcoa Inc (AA.N) gained 4.5 percent to $12.92.

In the latest economic data, factory activity in the U.S. Midwest slipped to its worst level since November 2009, though the figures still pointed to growth in the sector.

In a separate report, U.S. private sector job growth slowed in August for the second straight month, with 91,000 positions added. The Labor Department's much-anticipated August nonfarm payrolls report is set to come Friday.

"I don't think our growth rate is going to get us anywhere. The only difference lately is that the market takes bad news pretty well, which is a short-term bullish sign," said Joe Donohue, a money manager at Dimension trading in Red Bank, New Jersey.

The Dow Jones industrial average (.DJI) was up 120.03 points, or 1.04 percent, at 11,679.98. The Standard & Poor's 500 Index (.SPX) rose 15.18 points, or 1.25 percent, at 1,228.10. The Nasdaq Composite Index (.IXIC) put on 31.51 points, or 1.22 percent, at 2,607.62.

For the month, the S&P is down about 5 percent.

European shares rose 2.7 percent, extending gains on hopes the Fed would provide further stimulus measures. (.EU)

New orders for U.S. factory goods rose more than expected in July as demand for transportation equipment surged, pointing to some resilience in manufacturing at the start of the third quarter.

Minutes from the most recent Fed policymakers meeting, released on Tuesday, indicated several policymakers wanted more monetary easing, encouraging investors to dive back into equities.

S&P Considers Rating Subprime-Backed Securities Higher Than U.S. Government

Though the credit rating agency Standard & Poor's no longer believes the United States merits a top triple-A rating, it is prepared to put its stamp of approval on a set of bonds backed by subprime mortgages, only a few years after its high ratings of other subprime-backed securities helped set the stage for a financial crisis and near-collapse of the global economy.

S&P is considering assigning an AAA rating, its highest possible grade, to 59 percent of a set of bonds known as Springleaf Mortgage Loan Trust 2011-11, Bloomberg reports. The Springleaf portfolio is backed by $497 million in subprime loans.

Currently, Standard & Poor's rates U.S. Treasury bonds at AA-plus, one notch below triple-A. If the agency assigns the Springleaf bonds a triple-A rating, it would suggest that S&P believes the subprime-backed securities to be a safer investment than Treasuries, even though three years ago, subprime mortgages played a large role in triggering a market panic, an implosion of the financial sector and ultimately a global recession.

In the years preceding the financial crisis, S&P, along with Moody's and Fitch Ratings, gave top marks to thousands of risky mortgage-related securities, leading to those assets becoming widely traded and forming the basis of a global speculative bubble.

Earlier this year, the Financial Crisis Inquiry Commission released a report in which it declared that "the three credit rating agencies were key enablers of the financial meltdown," noting that "the mortgage-related securities at the heart of the crisis could not have been marketed and sold without their seal of approval" and concluding that "this crisis could not have happened without the rating agencies."

Despite the central role that subprime lending played in the financial crisis, the practice has recently been creeping back into fashion, with subprime loans for auto purchases on the rise and a growing number of private investment firms granting home loans to buyers who do not meet the credit standards of banks.

Standard & Poor's made headlines during the first week of August when it lowered its rating for the United States' sovereign debt by one notch, to AA-plus from AAA, following the resolution of the debt-ceiling standoff in Washington. The downgrade touched off several weeks of stock-market volatility and sharpened concern among analysts and market participants that the fragile U.S. economy could slip into a double-dip recession.

In the wake of that downgrade, a growing number of commentators have criticized S&P's judgment, even as the agency has warned that it might issue further downgrades to U.S. states and municipalities.

Shortly after the downgrade, a blog post at the Web site of the U.S. Treasury said that "fundamental questions" had been raised about S&P's "credibility and integrity." Less than two weeks later, the city of Los Angeles announced it would no longer be using S&P to evaluate local investments. L.A.'s Interim City Treasurer Steve Ongele told the Los Angeles Times that the city has "really lost faith in S&P's judgment."
